Protein Energy Balls
Ingredients
1 ½ cups dates, pitted (soaked in water for up to 2 hours if dates are dry)
¾ cup organic rolled oats
2 tbsp. flax seeds, ground
¾ cup raw almonds
¼ cup almond butter (can sub all almonds as well)
1 tsp. Vanilla
¼ tsp. Sea salt
Cacao Cinnamon Variation
¼ cup cacao powder
½ tsp cinnamon
Coconut Chia Variation
¼ cup. unsweetened shredded coconut
2 teaspoon chia seed
Instructions

Using a food processor, pour the almonds, oats and ground flax into the bowl of the processor and turn on high speed until finely ground, about 30 seconds.

Stop the machine, add in the almond butter, vanilla and sea salt and process for another 10 seconds until smooth.

While the machine is running add in the dates, a few at a time.

Roll out the mixture using your hands or a 1-2 oz. scoop into a size no larger than a ping pong ball.

Refrigerate.
Cacao Cinnamon Variation

Add in 1 tsp of the cacao and all the cinnamon while you are making the base mix.

Roll each ball into the cacao, using more as necessary.
Coconut Chia Variation

Add in 2 tbsp. of the coconut and all the chia while you are making the base mix.

Roll each ball into the remaining coconut.
Date Caramel Sauce
Ingredients
1 cup dates, pitted (soaked in water for up to 2 hours if dates are dry)
2 tbsp. maple syrup
½ cup coconut milk
1 tsp vanilla extract
¼ tsp. Sea salt
2 organic apples, cored and sliced
Instructions

Combine all ingredients in a high speed blender and blend for about 2 minutes, stopping to scrape down sides with a spatula. Continue to blend until smooth and creamy.

Serve with apple slices as a snack,.
**Note** If you do not have a high speed blender such as a Vitamix you may need to combine all ingredients, except for the vanilla, in a sauce pot and bring to a simmer for 1 minute. Then puree in blender with vanilla to ensure the mixture is smooth and warm.
